About Cajun and Creole cooking

Cajun food was based on French country cooking, but the ingredients were adapted to fit the marshy Bayou country of Louisiana. It was based on the Spanish, West Indian, and African influences that later crept into the Cajun repertoire.

alligator102Creole Cooking is southern American cooking with its base in New Orleans. It’s the French and Spanish styles of cooking with many interpretations on how to cook. It was the blending of these different cultures that gave birth to the Creole cuisine as we know it today.

Both Cajun and Creole cooking rely on seafood, rice, herbs, peppers, and green onions as staple ingredients – they are frequently hot and spicy in character.

Whatever the similarities or differences, one thing is certain: Cajun and Creole cooking is among the most spirited in America today.
